Cardamom, cumin and corriander
I am a sucker for aloo gobi
and never a vindaloo have I seen
can I not do
except for one chef
whom I brought upon myself
and justly served
a brow of sweat untofore experienced
the untold multitude of eggplpant
never quite properly roasted
nor curry found
to match the perfume
and sublime creaminess
of a punjabi exile
slave waging their way to jivan mukta
in a kitchen here,
breath in and breath out
hours after
the reason for the spice road
vulgar colonialism aside
and minor transgression of attachment
to sense
but nothing went down better
than an IPA with benghan bartha
